Breakfast for Dinner!


I wanted to share what I made the other night for dinner. We were in the mood to have breakfast since we had some amazing pepper bacon just waiting for us in the fridge. I decided to be adventurous and throw a couple of ingredients into a baking dish to make what some people would say it is a spanish omelet. I just called it my easy bake creation!


What I found in my house Ingredients:
Russet Potatoes (I used 3 med sized ones)
Butter
1/2 Onion
Bella Mushrooms
Eggs (I used 4)
Cheddar Cheese (just enough to cover the top)
Mozzarella Cheese (I used this because I didn't have enough Cheddar)
Veggie or Olive oil spray

Preheat oven to about 325
I used a circular baking dish for this.


Take the potatoes and peel and slice about 1 inch thick round discs to cover the bottom of the dish. Take a couple of spoon fulls of butter and place over the potatoes. Place the dish in the microwave for 3 min. I had one left over potato that I took and chopped very thinly as in almost hash brown size, place it to the side. Then take your 1/2 onion and cut it in half. Take one of the halves and mince it and then slice up the other half into longer pieces such as you would put on a burger. I like having different textures if you want to mince your whole half, or have it all in the long pieces go for it.



Once the 3 min are up on the microwave add the thinly sliced potatoes on top with the minced onions and sliced onions. Take a couple of spoon fulls of butter again and place in equal parts across the top of this. Place in the microwave for another 3 min.


After this is done in the microwave take it out to rest and cool down. While resting beat about 4 eggs together, the amount depends on what size baking dish you are using so adjust where needed. Pour the eggs over the potatoes. Then slice up the bella mushrooms and place on top. Spray the mushrooms with some oil. Then sprinkle with some garlic salt and pepper.


Bake this for about 10 min, then add on the cheese. Bake for another 10 min, and check on it. When the cheese starts becoming brown then it is ready to eat! Mmmmmmmm


You can add whatever else you think you would like to it. Maybe add in some ham, or top it with some salsa. This is a super simple meal and I hope you enjoy it as much as we did!!!!!!

Dinner in a Flash!

Last week Mike had been out of town pretty much the whole week. He came home once to spend the night and then catch another flight, so I got to enjoy seeing him for one night. This is pretty much how our relationship goes though with his job. He is always traveling and I am busy with work. I was excited last Friday for him to return home, and I couldn't wait to cook him up a delicious meal! I was so busy that week with work and getting everything ready to head to Florida I didn't have much time for prep.



Here is how my Friday schedule went:

-Work from 8:30-3 (we get off early on Fridays!)

-Meeting with Chef Gabby at 4 (yep not so early for me this Friday)

-Pedicure on my lunch break (ummm I couldn't go to Florida without one!)
-Headed to target around 5 for groceries


Mike's flight was scheduled to land at 6! I wanted to have dinner pretty much ready for him when he got home, and I wanted it to be good! As I said I had no time for prep, I was grocery shopping at 5 when his plane would land at 6!

Here is what I did:
I decided to actually go with a meat pre prepped for me, ahhhhh! It was not something I was proud about but I had time constraints! So I tried one of those archer farms stuffed chicken breast. This one was the chicken stuffed with swiss and ham, cordon bleu style, which I knew Mikey liked. Then I picked up some potatoes and carrots. He loves cheesecake, it's pretty much the only dessert besides strawberry cake that he likes. So I grabbed a small premade cheesecake and picked up some strawberries to go on top. After picking up all the other groceries for the house I checked out around 5:50 just as Mike was texting me that his flight was landing!! So I booked it home!

I went into speedy mode, threw the chicken in the oven, chopped up the strawberries put them in a bowl with sugar so they could sauce up, peeled and chopped up the potatoes for mashing, peeled and chopped off the skinny ends of the carrots and threw the larger portion in the pot. Go Go Go, Cook Cook Cook!!! I felt like I was in a timed competition lol

Mikey walked in the door to a house that smelled of deliciousness, just what I wanted!:) It only took me about 10 more minutes to present him with this...







Mmmmmmm it was yummy:)


I feel like People don't think to add carrots often to their meals. It's a very pretty color to add to your plate and is very good for you. So here is what I do if you would like to try it out, super simple~


I rinsed and cut off the stems, then peeled and cut off the skinny end of the carrot. Then I throw the larger half of the carrot into a pot of salted boiling water. Boil for about 12 minutes, unless you like them to be really soft then boil longer. I like mine to be cooked through but I like for it to still have a little bite to it. Plus this texture goes well with the seasoned butter that I do. I melt down some butter, and the amount will vary according to how many carrots you use so do what you think is best. I squeeze about half a lemon into it, add garlic salt, pepper, and a dash of extra virgin olive oil. I do not have measurements I'm sorry, so do everything to your taste. Once the carrots are cooked I drain them and cut them into bite sized pieces. I enjoy them this way so try it out and see what you think!




The Archer farm stuffed chicken was actually really good! I tried my best to throw it off to Mikey that I made it but once he saw the netting left on the pan it was over. He said "So you want me to believe that you were able to put a netting like that on the chicken?" I of course couldn't contain my laughter as I tried to tell him yes lol. The only thing I would add to the chicken next time is I would make a sauce to go over it. Their product has good reviews in my book. The premade cheesecake and prepared chicken really helped me in my time crunch!




We enjoyed our dinner, and it just goes to show that no matter how limited in time you are- you can still create a special sit down dinner to catch up with the ones you love!

Heavenly Travels

Hello Hello! I enjoyed saying goodbye to Atlanta this past weekend, and saying Hello to South Ga. I left for Savannah last thursday to attend the Georgia School Nutrition Association Food show.

I had a great time showing our products and playing!

Mikey came and joined me Friday afternoon. We stayed at the Westin Resort right on the river. It was so relaxing and the views were beautiful! Since we were on the other side of the river they had a ferry boat that would pick you up and take you across to river street. So we took the ferry boat across the river and went to a place called Fiddlers Crab House. This picture pretty much describes how health conscious I was during my trip...
I have trouble remembering to take pictures of my food before I plow right in, so that is why you see some food missing! We split some delicious crab stew, crab cakes, and their fried seafood platter of shrimp and scallops. I really enjoyed the crab stew and I have been craving it ever since! Mikey really liked the crab cakes but didn't really care so much for the seafood platter. He is picky when it comes to his seafood, that's a born and raised Florida boy for you. I on the other hand loved the shrimp from the platter, and the scallops were just okay in my opinion. All in all though I definitely enjoyed it.


When the show was over on Saturday I headed my little happy self up to Statesboro, where I attended College. I had a list of things to do once I got to statesboro...
1) Walk GSU's campus with Mikey
2) Eat my heart out at El Som
3) Go and See my lil Ladies

Us enjoying Sweet Heart Circle back in 2009We started dating my senior year, and we had so many awesome memories from that time. He would drive down to see me on the weekends when he was in Augusta. Seriously some of the best times of our life! I loved walking the campus with Mikey and reminiscing over my days at GSU.

After our walk we were both so excited to go to El Som, my Heaven on Earth. If you know anything about me, you know that I pretty much lived at El Som in College. They have the best mexican food for the cheapest prices you will ever see, plus the health benefits are amazing!!! (jk) We had 2 meals, 5 ritas, all for under $30! You would see a picture here if I wasn't in such a state of unconscious happiness!! Seriously we could have stayed there for the rest of our time, hmmm lifes, but I needed to go see my lil ladies!!


Who are my lil ladies?? These are the girls that I baby sat for in College, they did not like me to use the term babysit and preferred to be called lil ladies. So I lil lady sat for them pretty much every friday, until my last semester when I moved in with them so I wouldn't have to sign a 12 month lease. Yes the apts in Statesboro like to rope you in for 12 months, ugh so annoying. Anyways so Mikey and I went and kept the girls and let Joy (their mom) have the night off. We had sooooo much fun with them. There are 3 of them- Holly (12), Heidi (9), and Haven(6). They are some of the most wittiest and smart girls I have met. We just cracked up at them the whole time! I always love watching Mikey interact with them, he is going to be such an amazing dad one day.


They love Mikey, wherever he went they were not far behind.

If I could have I would have packed them up in my suitcase and brought them home with me! Maybe next time;)



I really enjoyed my time and I definitely fell off my healthy eating bandwagon. Can you blame me though!? lol Now back to reality!!!

Love Hate Relationship

It is very rare that I get a chance to write on my blog. I am sorry for the neglect dear food chatter!:(

Here is the deal, I am now 26 years old. Never had to worry about what I ate and never had to exercise. Well this illusion of being thin and living this world has come to an end! Ugh! So now my love of food has been turned into, a love hate relationship! I have recently moved into a new apartment and I am getting use to this new area. I am now having to find a place to work out, where as I never needed to worry about such a thing. Instead of going back for seconds of the delicious meals that I create, I now have to eat smaller portions. Ugh why do I love thee sooooo much!!!?? I have always been such a fat kid at heart, time to tell the little kid to grow up and I hate you! I can just imagine her bursting into tears and running away to a little corner with a whole tub of ice cream heartbroken:(

Run...Run far far away!!!!

Okay so here it is I have a goal... I need to loose ten pounds, yes you heard right 10 whole pounds! Never in my life did I think I would utter such words! So in order to do this I am going to switch the focus on my food blog for a moment to healthier choices to eat. Not to say that I have ever had a problem eating good foods, I love my fruits and veggies. I am going to cut out sweets, stop eating after 9, and start a weekly workout routine! I really would like to have this accomplished in 2 weeks, dream big right! Hey I think I can do it.....I think I can, I think I can, I think I can.....

Anyways so what does this mean for my blog???? I will feature healthy (my idea of healthy) meals, and products. For the next month my blog is getting ready for swimsuit season!!!!

Alright going to finish my tub of ice cream...I start tomorrow!!
